Maryland Style Crab Cakes
Here’s a classic Maryland-Style Crab Cakes recipe, known for showcasing the sweet, succulent flavor of crab meat with minimal filler. Serve these with a lemon wedge, tartar sauce, or a light remoulade for a delicious meal.
Ingredients:
1 lb lump crab meat (preferably fresh, picked over for shells)
1 large egg
1/4 cup mayonnaise
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 tsp Old Bay seasoning
1/4 tsp salt
1/4 cup finely crushed saltine crackers or breadcrumbs
1 tbsp fresh parsley, chopped
1 tbsp fresh lemon juice
2 tbsp unsalted butter (for frying)
Lemon wedges, for serving
Instructions:
1. Prepare the Crab Cake Mixture:
In a medium bowl, gently combine the crab meat, egg, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, salt, crushed crackers (or breadcrumbs), parsley, and lemon juice.
Fold the mixture gently to avoid breaking up the crab meat too much. Aim for a mix that just holds together.
2. Form the Crab Cakes:
Using your hands, shape the mixture into 4-6 cakes, about 1/2 to 3/4-inch thick. Place the cakes on a plate, cover with plastic wrap, and refrigerate for at least 30 minutes (or up to an hour) to help them hold together when cooking.
3. Cook the Crab Cakes:
Heat the butter in a large skillet over medium heat until melted and bubbling.
Add the crab cakes to the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and heated through. Handle them carefully as they are delicate.
4. Serve:
Transfer the crab cakes to a plate lined with paper towels to drain any excess butter.
Serve hot with lemon wedges on the side.
Tips:
Minimal Filler: Authentic Maryland-style crab cakes use minimal filler to let the crab meat shine. Use only as much as needed to hold the cakes together.
Crab Meat: For the best results, use lump or jumbo lump crab meat for a rich, meaty texture.
Chill Time: Don’t skip chilling the crab cakes; it helps them firm up and reduces breakage during cooking.
