BBQ Sticky Slow-Cooked Ribs
Here’s the recipe for BBQ Sticky Slow-Cooked Ribs:
Ingredients:
For the slow-cooked ribs:
1 ¼ kg (2 3/4 lbs) meaty pork ribs (about 5 or 6 ribs, in one piece)
1 liter (34 fl oz) hot chicken or vegetable stock
A thumb-sized piece of ginger, peeled and finely chopped.
3 cloves garlic (peeled and halved)
1 tbsp rice wine
1 tbsp caster sugar
For the glaze:
2 tbsp vegetable oil
Pinch of salt and pepper
1 thumb-sized piece of ginger (peeled and minced)
2 tbsp honey
2 tbsp soft brown sugar
3 tbsp soy sauce
1 tsp lemongrass paste
Instructions:
1. Slow-cook the ribs:
Add all the slow-cooked rib ingredients to a large pan (except the glaze ingredients). Bring to a boil, cover, and simmer for 3 1/2 hours. Check and top up with more water as needed.
Alternatively, use a crockpot: cook on medium for 4-5 hours or low for 6-7 hours.
After cooking, turn off the heat and drain the ribs, reserving the liquid for a tasty soup base.

Heat up the BBQ. Brush the glaze on the ribs, and place them on the BBQ. Cook for 5-10 minutes on each side, basting with more glaze until the ribs are sticky and golden.
4. Serve:
Place the ribs on a large plate, slice them into individual pieces, and serve.
Notes:
