Instructions

1. in a large pot melt the butter over medium heat. add the diced onion and sauté for {3_4} minutes until it becomes soft and translucent. Stir in minced garlic and cook for another 30 seconds, allowing the garlic to become fragrant.

2. Add the flour to the pot, stirring constantly for 1-2 minutes to form a roux. Gradually add the broth, whisking continuously until the mixture is smooth.

3. Pour in the milk, heavy cream, chopped broccoli, and grated carrot. Bring the mixture to a gentle simmer and cook for 10-15 minutes, or until the broccoli is tender.

4. For a creamy texture, use an immersion blender to blend part of the soup, or leave it chunky for more texture.
