Chocolate Mousse
ngredients:
27 oz full-fat coconut cream or coconut milk (refrigerated overnight)
2 tbsp confectioners’ sweetener (or regular icing sugar if not counting carbs)
3 tbsp unsweetened cocoa powder
Optional: 1 oz of 70% dark chocolate, shaved (use sugar-free chocolate for low-carb)
Instructions:
Prepare Coconut Cream: Place the coconut cream cans in the refrigerator overnight. When ready, carefully open the cans without shaking them and scoop out the thick cream from the top, leaving any liquid behind (you can save this liquid for smoothies).
Whip the Coconut Cream: In a bowl, add the thick coconut cream and sweetener. Use a hand mixer (or whisk) to beat the mixture on high until it’s smooth, thick, and creamy (about 1-2 minutes). Reserve 4 tablespoons for a topping if desired.
Make the Mousse: Gently fold in the cocoa powder and salt (if using). Beat again until the mixture is well combined, smooth, and thick. If adding shaved chocolate, fold it in at this stage.
Chill and Serve: The mousse will set almost immediately. You can refrigerate it for a firmer texture or serve it immediately. Top with reserved whipped cream and sprinkle more shaved chocolate for garnish if desired.
Notes:
Best Results: Coconut cream works best, as the higher fat content helps achieve a creamy, thick consistency. Avoid using light or reduced-fat coconut milk.
