Classic French Crepe Whipped Cream and Chocolate
Ingredients:
For the crepes:
* 1 cup all-purpose flour
* 2 large eggs
* 1 cup milk
* 2 tablespoons unsalted butter, melted
* 1/4 teaspoon salt
* 1/4 cup water
For the whipped cream:
* 1 cup heavy whipping cream
* 2 tablespoons powdered sugar
* 1/4 teaspoon vanilla extract
For the chocolate sauce:
* 1/2 cup heavy cream
* 1/2 cup semisweet chocolate chips
* 1 tablespoon butter
Instructions:
Make the crepes:
* In a large bowl, whisk together the flour, eggs, milk, melted butter, salt, and water until smooth.
* Let the batter rest for at least 30 minutes, or up to 1 hour.
* Heat a non-stick skillet over medium heat. Brush lightly with butter.
* Pour 1/4 cup of batter into the skillet and swirl to create a thin, even layer.
* Cook for 1-2 minutes, or until the edges are set and the bottom is lightly golden brown.
* Flip the crepe and cook for 1 more minute, or until set.
* Transfer the crepe to a plate and continue with the remaining batter, cooking each crepe the same way.
Make the whipped cream:
* In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract together with an electric mixer until stiff peaks form.
Make the chocolate sauce:
* In a small saucepan, combine the heavy cream and chocolate chips.
* Heat over low heat, stirring occasionally, until the chocolate chips are melted and the sauce is smooth.
* Stir in the butter.
Assemble the crepes:
* Place a crepe on a plate.
* Top with a dollop of whipped cream and a drizzle of chocolate sauce.
* Fold the crepe in half or into thirds.
* Serve immediately.
