Creamy Broccoli Soup

Ingredients:

 * 1 head of broccoli, cut into florets

 * 1 onion, chopped

 * 2 cloves garlic, minced

 * 4 cups vegetable broth

 * 1 cup heavy cream

 * 1/2 cup grated Parmesan cheese

 * Salt and pepper to taste

 * Olive oil

 * Fresh cilantro, for garnish

 * Croutons, for serving

Instructions:

 *Sauté the aromatics: Add a splash of olive oil to a large pot and heat it over medium heat.

Stir in the onion and garlic, cooking until they become tender, which should take about 5 minutes.

 * Add the broccoli: Stir in the broccoli florets and cook for 5-7 minutes, or until tender.

 * Blend the soup: Transfer the broccoli mixture to a blender and add the vegetable broth, heavy cream, and Parmesan cheese. Blend until smooth.

 * Season and serve: Add salt and pepper to taste.Pour the soup back into the pot and heat over low heat until warmed through. Serve hot, topped with fresh cilantro and croutons.

Tips:

 * To achieve a thicker soup, decrease the amount of vegetable broth used.

 * To make this soup vegan, use a plant-based heavy cream and Parmesan cheese.

 * Incorporate a pinch of red pepper flakes to add some heat.

 * Garnish with a dollop of Greek yogurt for a tangy flavor.
