Detox Soup Recipe

Here’s how to make a light and nutritious detox soup that’s easy to prepare and packed with beneficial ingredients.

Ingredients

2 bone-in, skinless chicken breasts (about ½ pound)

3 stalks lemongrass, crushed

1 piece fresh ginger (4 inches), peeled and sliced

1 carrot, cut into large pieces

1 stalk celery, cut into large pieces

1 leek, peeled and halved

1 bay leaf

½ teaspoon black pepper

1 dried Thai chili pepper

Kosher salt

1 package (5-ounce) baby spinach leaves, coarsely chopped

Instructions

1. Prepare the Base: In a large ovenproof skillet or soup pot, combine chicken, lemongrass, ginger, carrots, celery, leek, bay leaf, black pepper, chili pepper, and 1 teaspoon salt. Add 6 cups cold water.

2. Cook the Soup: Place the pot over medium heat, bringing the soup to a boil. Skim any impurities from the surface, then reduce heat to low. Cover and simmer for 45 minutes until the chicken is cooked through.

3. Cool and Strain: Turn off the heat and let the soup cool for 30 minutes. Remove the chicken, discard bones and skin, and slice the meat.

Strain the broth to remove the solids, then pour the liquid back into the pot.

4. Add Spinach and Reheat: Add the sliced chicken back to the soup along with the spinach. Warm over medium-high heat until heated through.

5. Serve: Enjoy your detox soup immediately for a nourishing and satisfying meal.
