Flan in a Jar

Ingredients:
½ cup white sugar
1 tablespoon hot water
1 1/3 cups whole milk
1/3 cup sweetened condensed milk
2 large eggs, beaten
1 egg yolk, beaten

Directions:
Caramelize the sugar: In a small saucepan, heat the sugar over medium-low heat until it starts to liquefy. Continue cooking until it turns amber in color, about 2 minutes. Add the hot water and stir well. Divide the caramel between six 4-ounce jars.
Heat the milk: In another saucepan, heat the whole milk just until it’s about to scald. Remove from heat and transfer to a bowl.
Mix the custard: In a separate bowl, whisk together the sweetened condensed milk, eggs, yolk, salt, and vanilla. Gradually add a little hot milk to temper the egg mixture, whisking constantly. Then slowly combine the rest of the milk mixture with the eggs, whisking well.
Fill the jars: Pour the custard mixture evenly into the jars on top of the caramel.
Pressure cook: Place the jars on a trivet inside a pressure cooker with 1 cup of water. Lock the lid and cook on high for 6 minutes.
Cool: Let the pressure release for 10 minutes, then quick-release the remaining pressure. Allow the jars to cool for at least 30 minutes before transferring to the fridge to cool for 1 hour before serving.
