Grilled Queijo Coalho Cheese Skewers Recipe

Queijo Coalho is a traditional Brazilian cheese, often enjoyed grilled on skewers. This recipe is simple and delicious, perfect for a summer barbecue or an appetizer.

Ingredients:

500g (1 lb) Queijo Coalho (cut into 1-inch cubes or rectangular pieces)

2 tbsp olive oil

1 tsp dried oregano

1 tsp paprika or chili powder (optional, for some heat)

1 tbsp lemon juice

Freshly ground black pepper (to taste)

Salt (to taste)

Wooden or metal skewers

Instructions:

Prepare the Skewers:

If using wooden skewers, soak them in water for 30 minutes to prevent them from burning on the grill.

Thread the pieces of Queijo Coalho onto the skewers. You can alternate with vegetables like bell peppers or cherry tomatoes if desired.

Season the Cheese:

In a small bowl, mix together the olive oil, oregano, paprika, lemon juice, pepper, and salt.

Brush the skewers with the olive oil mixture, ensuring the cheese is well-coated. You can also let it marinate for about 10-15 minutes for more flavor.

Grill the Skewers:

Preheat the grill to medium-high heat.

Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the cheese is golden brown with grill marks. Be careful not to overcook, as Queijo Coalho can melt quickly.

Serve:

Serve the skewers hot off the grill. Optionally, squeeze a little extra lemon juice over them or sprinkle with fresh herbs like parsley or cilantro.

Enjoy your grilled Queijo Coalho cheese skewers with a cold drink!
