Pistachio Cheesecake

Here’s a delicious pistachio cheesecake recipe that combines a rich creamy filling with a nut crust, perfect for any occasion.

For veneers

  • 1 1/2 cups Graham biscuit crumbs (about 160g)
  • 1/2 cup pistachios (finely ground, about 60 g)
  • 3 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted, about 90 g)

For the cheese cake filling

  • 4 cups cream cheese (soft, about 900 grams)
  • 1 cup granulated sugar (200 g)
  • 3/4 cup pistachio paste (180g)
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream (60 ml)
  • 1/2 cup sour cream (115 g)
  • 11/2 tablespoons cornstarch

For garnish

  • 3 tablespoons pistachio paste (45 g)
  • 120 g white chocolate
  • 1/4 cup heavy cream (60 ml)

For decoration

  • Finely ground pistachios

Step 1: Prepare the shell

  1. Preheat oven to 325°F (160°C).
  2. In a food processor, mix graham biscuit crumbs, ground pistachios, sugar and melted butter. Beat until well combined.
  3. Press the mixture into the bottom of the 9-inch spring form skillet. Bake for 7-8 minutes and let cool.

Step 2: Make a cheesecake filling

  1. In a large bowl, mix the cream cheese and sugar until smooth.
  2. Add pistachio paste and mix until combined.
  3. Beat the eggs one by one, mixing gently after each addition.
  4. Add vanilla extract, sour cream, heavy cream and cornstarch. Mix until smooth.

Step 3: Bake the cheesecake

  1. Pour the filling over the cooled crust.
  2. Place the spring form pan in a larger roasting pan filled with hot water (water bath).
  3. Bake for 50-60 minutes, until the edges are adjusted but the center is shaken slightly.
  4. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.

Step 4: Prepare the top layer

  1. In a bowl, add the white chocolate. Heat the heavy cream until cooked and pour over the chocolate. Leave on for 1 minute, then stir until smooth.
  2. Mix the pistachio paste until well combined.

Step 5: Assembly and cooling

  1. Pour the top layer over the cooled cheesecake and distribute evenly.
  2. Put it in the refrigerator for at least 4 hours, preferably overnight.

Step 6: Apply

  1. Before serving, garnish with finely ground pistachios.
  2. Slice it and enjoy the delicious pistachio cheesecake!
