Rajun Cajun Peppers
Here’s a flavorful recipe for Rajun Cajun Peppers by Chef Johnnie G. These stuffed bell peppers are filled with seasoned pork, rice, and vegetables, topped with pepper jack cheese for a Cajun twist!
Ingredients
3 large red bell peppers, halved and seeded
1 lb ground pork and meat mix
1 container dressing mix (e.g., Crawfish Town Market)
2 cups C’est Tout trinity mix (onion, celery, bell pepper)
1 bunch green onions, chopped
2 tbsp D.a.T. Sauce
2 tbsp creole seasoning
2 tbsp minced garlic
1 tsp cayenne pepper
1 tbsp bacon grease
4 cups cooked jasmine rice
Pepper jack cheese slices
Instructions
1. Preheat Oven:
Preheat your oven to 350°F (175°C).
2. Cook the Filling:
Warm bacon grease in a skillet on medium heat. Add the ground pork and dressing mix, breaking up the meat as it cooks.
Add D.a.T. Sauce, creole seasoning, garlic, and trinity mix. Continue cooking until the liquid is absorbed and vegetables are softened.
3. Add Rice and Green Onions:
Stir in the cooked rice and chopped green onions, mixing well to combine. Remove from heat.
4. Stuff the Peppers:
Spoon the rice mixture into each half of the red bell peppers. Top with one slice of pepper jack cheese.
5. Bake and Broil:
Cover the stuffed peppers with foil and bake for 1 hour. Remove foil, add another slice of cheese on top of each pepper, and broil for 3 minutes until cheese is bubbly and golden.
6. Serve and Enjoy:
Serve hot as a spicy Cajun-inspired main or side dish!
Tips:
Add extra D.a.T. Sauce or cayenne if you like more spice.
Substitute ground pork with ground beef or turkey if desired.
