Stuffed Italian Frying Peppers with Sausage, Spinach, and Pine Nuts
This classic Italian-inspired dish combines tender frying peppers with a rich and flavorful stuffing made from sausage, spinach, pine nuts, and Parmigiano-Reggiano. Ingredients:
1 bag baby spinach (about 5-6 oz.)
2 slices white sandwich bread, crusts removed
¼ cup milk
1 large egg, lightly beaten
2 tablespoons freshly grated Parmigiano-Reggiano cheese
2 tablespoons pine nuts, lightly toasted
2 tablespoons chopped red onion
1 lb. of Italian sausage (sweet or spicy), with casings removed
Salt, to taste
Freshly ground black pepper, to taste
8 small Italian frying peppers, halved lengthwise and seeds removed
¼ cup extra-virgin olive oil
1 cup canned tomato sauce
1 cup low-sodium chicken broth
Directions:
Step 1: Prepare the Spinach
In a large skillet over high heat, cook the baby spinach, stirring constantly, until just wilted—this should take about 1 minute. Remove from heat and drain thoroughly, pressing out as much excess water as possible to prevent a watery filling. Once drained, coarsely chop the spinach and set it aside. Rinse out and dry the skillet, as it will be used later.
Step 2: Make the Filling
In a large mixing bowl, tear the slices of white bread into small pieces. Pour the milk over the bread and let it soak for a minute until soft. Add the egg and grated Parmigiano-Reggiano cheese, mixing well with your hands or a fork to create a smooth paste.
Next, incorporate the toasted pine nuts, chopped red onion, cooked spinach, and crumbled Italian sausage into the mixture. Season lightly with salt and freshly ground black pepper, then mix everything together thoroughly until well combined.
The filling should be soft and moist yet sturdy enough to maintain its form when gently pressed.
Step 3: Stuff the Peppers
Using lightly moistened hands, take small portions of the sausage filling and divide it evenly among the halved peppers. Lightly pack the mixture into each pepper half, making sure it’s evenly distributed but not overfilled.
Step 4: Brown the Peppers
Heat the extra-virgin olive oil in the same large skillet over medium-high heat until shimmering. Carefully place the stuffed peppers filling-side down into the pan and cook for about 4 minutes, or until the filling develops a deep golden-brown crust.
Using tongs, gently flip the peppers and cook for another 4 minutes, allowing the skins to blister and brown. This step enhances the texture and intensifies the flavors of the peppers.
Step 5: Simmer in Tomato Sauce
Reduce the heat to medium and carefully pour in the canned tomato sauce and chicken broth. The liquid should partially cover the peppers. Cover the skillet with a lid and let the peppers simmer gently for 5 to 6 minutes, or until the sausage filling is fully cooked and the peppers have softened. The sauce will slightly thicken as it reduces, creating a delicious, rich coating for the stuffed peppers.
Step 6: Serve and Enjoy
Once the peppers are tender and cooked through, transfer them to serving plates. Spoon some of the flavorful tomato sauce over the top. These stuffed peppers are best enjoyed hot, served with crusty bread to soak up the sauce or alongside a simple salad for a well-rounded meal.
