Ultimate Beefy Enchilada Casserole
Ingredients
For the Beef Mixture:
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (4 oz) diced green chiles
1 packet taco seasoning
Salt and pepper, to taste
For the Enchilada Sauce:
1 can (10 oz) of red enchilada sauce, either homemade or store-bought.
1 can (14.5 oz) diced tomatoes, drained
1 cup sour cream
1/2 cup beef broth or water (optional, if you prefer a thinner sauce)
For Assembly:
12 small corn tortillas
2 cups shredded Mexican cheese blend
Sliced black olives, for garnish (optional)
Chopped green onions, for garnish (optional)
Fresh cilantro, for garnish (optional)
Instructions
1. Prepare the Beef Mixture:
In a large skillet over medium heat, cook the ground beef until it starts to brown, breaking it up as it cooks.
Add the chopped onion and garlic, and cook until the onion softens, about 3–4 minutes.
Stir in the diced green chiles, taco seasoning, salt, and pepper. Cook for an additional 2–3 minutes. Remove from heat.
2. Make the Enchilada Sauce:
In a bowl, mix the enchilada sauce, diced tomatoes, sour cream, and beef broth (if using) until smooth and combined.
3. Assemble the Casserole:
Set the oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with grease.
Spread a thin layer of enchilada sauce mixture on the bottom of the dish.
Layer 4 corn tortillas over the sauce, overlapping as needed.
Spread half of the beef mixture over the tortillas, then sprinkle a third of the cheese on top.
Pour about a third of the sauce over the cheese layer.
Repeat the layers (tortillas, beef, cheese, and sauce) once more.
Complete the dish by layering the last tortillas, pouring over the remaining sauce, and sprinkling the rest of the cheese.
4. Bake:
Wrap the casserole with foil and place it in the oven for 20 minutes.
Remove the foil and bake for an additional 10–15 minutes, or until the cheese is bubbly and golden.
5. Garnish and Serve:
Remove from oven, let sit for a few minutes, and garnish with olives, green onions, and cilantro if desired.
Tips:
For extra flavor, add a can of black beans or corn to the beef mixture.
You can swap ground beef for ground turkey or chicken for a lighter version.
